Happy #MeatlessMonday yay!!  I went to the Ybor farmer's market this weekend and bought some zucchini specifically for this recipe I saw on Pinterest and it turned out amazinggggggg.  Fun little finger foods, meat-free!!

WHAT YOU NEED:

3 zucchinis

1 T Basil

1 T Spice World Minced Garlic

1/4 cup grated carrot

1/2 cup fat-free ricotta cheese

1/2 cup shredded Parmesan cheese

2 T lemon juice

1/4 teaspoon salt and pepper

WHAT YOU DO:

Preheat oven to 450 degrees

Wash zucchini & cut off the ends.  Cut each zucchini in half and then cut them length-wise, you will have 12 piece of zuch in total.

Scoop the insides out and place the zucchini boats on a baking sheet, sprayed with cooking spray.

Time to make the filling!!  Mix the basil, grated carrot, garlic, ricotta, Parmesan, lemon, salt & pepper and mix it totally.  Evenly fill each boat and the filling and bake for 30-40 minutes or until zucchini is tender.
