Easy and low-carb.  Love everything about this.  Bikini, what? ;)

WHAT YOU NEED:

Red, yellow, green bell peppers (with a flat bottom, so it sits up right on a cookie sheet)

Lean ground beef

14.5 oz can of Del Monte diced tomatoes, the zesty chili-style (drained)

Diced onions

Salt to taste

Mozzarella or provolone cheese, whatever you're in to

WHAT YOU DO:

Heat oven to 350

Brown the ground beef in a pan, adding onions over medium heat

Once it's completed brown, add the can of drained tomatoes

Cut the very tops off of the peppers, gut them out

Fill the beef/onions/tomatoes mixture to the top of each pepper

Top with shredded mozzarella or a slice of provolone, whatever you dig (I cut up string cheese and used that, it's all I had lol)

Throw the pepper in the oven on a cookie sheet for 20 minutes or until the cheese is melted to your liking.  ENJOYYYY!! :)
