Food Perv in the Kitchen - Spinach & Tomato Quesadilla with Pesto [RECIPE]

Easy!  Meatless!  Incredibly tasty!  Extremely photogenic for your Instagram food pics!


2 Roma tomatoes

Baby spinach


Fat-free feta cheese crumbles

Shredded mozzarella cheese

2 large flour tortillas


Spread a layer of pesto on a tortilla and place it on a skillet, over medium heat.

Add a light layer of mozz & feta cheese

Add tomato slices (thinly sliced!) and some spinach.  I microwaved the spinach for about 30 seconds so it was little smooshy ;)

Heat for a few minutes and then fold it in half.  Heat each side for 5 minutes, until the tortilla is lightly browned and cheese is melted.

Remove it from skillet and cut into 3 triangles and enjoy!!
