I did my Meatless Monday a day late yesterday (I am still recovering from being a sun-baby this weekend)... and these were easy, tasty & my FIRST time experimenting with quinoa (a good substitute for rice or couscous).

Meat-free & full of yummy veggies :)

Serves 4


3 cups of chopped peppers, onions and asparagus

1 tomato, chopped

Garlic powder, salt and freshly ground black pepper 

1 cup quinoa

4 large bell peppers

Olive oil


Preheat the oven to 400 degrees F.

Saute the veggies with olive oil til tender, season with garlic powder/salt/pepper

Prepare the quinoa, following the instructions.  Then mix the veggies with the quinoa with the veggies.

Cut the top off of the bell peppers, scoop out the guts out.  Place them on a cookie sheet, spaced out.

Fill the peppers with the veggie/quinoa mix.  Top with feta cheese & put them in the oven for about 25 minutes.

Yummy yum yum!!

You will probably have some veggies left over, but I am never mad about that ;)
