After my birthday week vaca/bender I was NOT in the mood to cook anything healthy last night. But I seriously should after all the garbage I put into my body over the past few days. Soooo... I made THIS:
Grab a couple FRESH chickens, ready to cook from the meat department at the grcoery store. I went with two 5-pounders (give or take).
Throw those bad boys in a countertop roaster (or if you don't have one, a roasting pan and into the oven after you season). Pour chicken stock on the bottom of the pan, chop up 3 stalks of celery, 1/2 a white onion and season the birds with salt, pepper, garlic powder and basil
After about 2 hours of roasting (or so, follow the cooking instructions and use a meat thermometer...you don't wanna be crapping your pants later if you didn't cook it long enough) you should be ready to roll with tender chicken for salads, sammies, soup or whatever healthy meal you want to throw together.
Boom shaka laka.
Ok, I am almost ready for my bikini now...
