I love cooking but do not love following recipes. It always seems as thought there a too many ingredients (that you don't even end up tasting) and way too many steps. Cooking to me is like putting together my outfits with accessories. If there is too much preparation and too much added it its usually a fail.
I found this recipe on Pinterest and just ended up getting a store bought peanut sauce and adding some garlic, low sodium soy sauce, and green onion to the chicken while it was simmering. I simmer it on medium to low heat so that the chicken is moist and the sauce doesn't burn.
I prfer to use butter lettuce instead of iceberg because it make for a better wraps around the chicken better and has more flavor,but you can use either one. For the topping I used left over green onion, fresh cilantro, and peanuts that I picked out from some trail mix we has in the pantry. Because ya know...use what you have.
